BREAKFAST

MONKEY BREAD

4 cans "layered" style biscuits
5 tsp cinnamon
1 ¼ cup sugar
1 ½ sticks margarine
2 - 8 or 9 inch cake pans

Preheat oven 25 degrees less than biscuit can directions (sugar will burn easily)
Melt margarine in bowl or large measuring cup
Combine sugar and cinnamon in a bowl
Separate biscuits and quarter each
Roll biscuit dough in sugar/cinnamon mixture
Place half of the biscuit dough in each pan
Equally divide the rest of the sugar mixture between both pans
Pour half of the melted margarine over the top of the sugared dough in each pan
Bake slightly longer than biscuit directions, watching until browned and layers are separated.

ROLL-UPS
To make breakfast more "fun" for kids, I make these and set out a variety of fillings for them to fill their own. This is great idea when their friends are over. I don't have to worry about somebody not liking a particular flavor!

2 egg yolks
1 1/2 cup milk
½ cup oil
2 tsp vanilla
2 ½ cup flour
1 tsp baking powder
¼ tsp salt
1 tbsp sugar
Mix batter until thin.

Heat round skillet with a drop of oil added until hot
Pour small amount of batter, only covering bottom of pan
Turn and cook both sides

These will be very thin so filling can be placed in center and rolled up

Fill with favorites such as syrup, jelly, peanut butter, chocolate sprinkles, warmed pie filling, or honey.

FRENCH TOAST

6 slices bread
2 eggs
¼ cup milk
1 tbsp vanilla

Mix eggs, milk and vanilla in bowl (large enough to flatly lay bread in)
Dunk bread in egg/milk mixture, covering or turning bread over to coat each side.
Do not let bread soak in liquid.
Heat margarine in skillet
Place covered bread in skillet, cooking until lightly browned

Serve topped with syrup, powdered sugar, sugar & cinnamon mix, jelly or another favorite topping!
